A magnificently flavoured wine, Cuvee Rose is assertive and complex, vibrant and generous. Redolent with bouquets of ripe red fruit, persistence in it's vibrant pinkish mousse, reminiscent of zabayon. Brut Rose is a seductive wine, the assemblage, which is formed around Pinot Noir, is both spontaneous and balanced, emphasising fruity liveliness. Cuvee Rose exhibits supple variances of hue, the assemblage gives it femininity. There are coppery shades and light amber tones, the complexity excites, a Champagne of naturalness and sensuality.

In 1446, Jean and Nicolas Moët were made nobles by King Charles VII. In 1743, one of the descendants of the Moët brothers, Claude Moët, who had been a wine trader in Epernay since the early 18th century, founded the Maison Moët. His grandson Jean Remy Moët, a visionary with a pioneering spirit, transformed this trading company into the world's leading luxury brand. For over two and a half centuries now, Moët has been the veritable embodiment of the genius of Champagne. Elegant salmon pink colour with golden hue. Intensely sensual, rose petals and musk, nutmeg and pink peppercorn. Great succulence amongst the chewy flavours and barely perceptible strawberry tannins. Hints of candied fruit, rich texture, a voluptuous texture throughout it's persistent mousse, Cuvee Rose lingers in a delicious finale tinged with vanilla and liquorice.

Lock & Key is a reference to ancestors who were brought to New South Wales as convicts aboard Australia's second fleet. A generously proportioned Pinot Chardonnay, the first sparkling wine to be made from fruit grown to the blossoming Hilltops region. Moppity Vineyard's original plantings are nearing forty years of age, some of the oldest stock in southern New South Wales. These mature, low yielding vines don't deliver much fruit but the precious grapes are wonderfully concentrated and produce the most remarkable sparkling wine.

The Moppity team endeavour to promote the somewhereness of site. There's nothing generic about Lock & Key wines, they reflect unique geographic origins. Moppity Vineyard's microclimate is cool to moderate with a long, even ripening period, which supports flavour development and underpins the intensity of the wines. Although early spring frost is an issue, the property is sited on undulating terrain, ensuring adequate frost drainage. Chardonnay and Pinot Noir is harvested in the cool of night at optimum ripeness to preserve freshness of fruit. Only the cleanest free run juices are cold fermented to retain aromatics and primary fruit. A secondary fermentation is initiated at Peterson's Champagne House.
 
Bright, vibrant, pale straw with a very fine bead. Complex aromas of bright lemon, green apple and stonefruit. Citrus and stone fruit flavours prevail, the wine shows a creamy texture and fine natural acid. Lock & Key is a bright, lively vintage sparkling wine with plenty of fresh citrus flavour, a wonderful effervescence and a rich, creamy mouthfeel. An excellent sparkling wine fit for any occasion worth celebrating.

The fifth generation of Morris endure as one of the world’s great winemaking estates, releasing an unbroken lineage of internationally renowned fortifieds year after year. Morris Liqueur Muscats are vinified from precious harvests of Brown Muscat grapes, a clone of the Muscat aux Petit Grains Rouge, which grows in bunches of small red berries. A rich bouquet of the most intense varietal Muscat characters, driven by a palate of wanton, indulgent complexity and beautified by the most beguiling rancio richness.

One of the finest and most interesting wines in Australia are the Morris Muscats. The unirrigated vines rely on natural rainfall. When very ripe at 16–18 baume, the grapes are hand picked, crushed and fermented on skins for 24 hours before draining and pressing the juice. The wine is topped up with spirit, and the fortified Muscat is matured in large oak casks ranging in size from 1,500 to 4,500 litres until blending. When blending occurs many different vintages are used in order to give lusciousness, richness, age and freshness.
